Ahi Tuna Poke Cups

I love a good recipe challenge…let’s be honest, I love a lot of challenges when it comes to food!  I tend to be ‘slightly’ competitive!  I was invited to participate in another JSL Foods recipe contest, using their egg roll and/or wonton wrappers and they are always so much fun, I couldn’t say no! I was in Maui recently and the flavors of my trip are the first thing that came to mind and what inspired this creation for the recipe contest.

The best part of these wrappers is they are such a versatile vehicle to get amazing flavors packaged and into your mouth!  I mean, the possibilities are endless.  At first, I was thinking about the Super Bowl and wanted to do a Buffalo Chicken wrap, but after some searching on the internet, it’s already been done.  I’m always searching for that next new thing that could work when stretched a tiny bit outside of the norm and that’s where this idea was born.  After plate after plate of sushi, seared ahi and ahi nachos, while I was in Hawaii, I thought why not create the perfect ahi poke bite in a wonton cup?


I began to create the recipe, considering the balance of salt, fat, acid, heat.  I wanted to create something delicious but also somewhat light. These Ahi Tuna Poke Cups are easy to put together, have layers of flavor and are an easy 2-3 bite appetizer. They would be perfect for entertaining because they are just as good room temperature, and the flavors are amazing!  The wonton cups are perfectly crisp and light, the ahi tuna poke is salty and creamy with the avocado, the crisp pickled cucumbers bring a pop of brightness and the drizzle of wasabi crema over the top packs the right amount of heat to bring all of the flavors together in the perfect bite.

Next time you have a get-together, a family dinner to celebrate a special occasion, or a BIG game day, keep these Ahi Tuna Poke Cups in mind and give them a try!  I know for me, just one bite and I’m right back to the island flavors in Hawaii that I know and love.  The Twin Dragon Egg Roll and Wonton Wrappers are my favorite because they’re all natural and I can get creative with whatever flavors I’m craving for the occasion!

Ingredients

  • Cooking Spray

  • 3 Tbs. Vegetable Oil

  • 12 Twin Dragon Wonton Wrappers

    For the Pickled Cucumbers:

  • 1 Persian cucumber – ¼” dice

  • ¼ C Rice Vinegar

  • 1 tsp. sugar

  • 2 Tbsp. hot water

For the Wasabi Crema:

  • 3 oz. sour cream

  • 1-2 Tbs. prepared wasabi (to desired level of heat)

For the Ahi Poke:

  • 1 lb. sushi grade ahi tuna – diced into ½” pieces

  • 1 scallion sliced thinly on a bias

  • 2 Tbsp. soy sauce

  • 1-1/2 Tbsp. sesame oil

  • ½ Tbsp. siracha

  • 1 avocado – 1/4” dice

  • ½ tsp. each of toasted sesame seeds and black sesame seeds



Instructions

  1. Preheat oven to 375 F. Spray muffin tin with cooking spray, use a paper towel to make sure bottom and sides of each cup are lightly coated.

  2. Brush vegetable oil on each wonton wrapper & gently place into the muffin tin, pushing corners out to the sides so they don’t close in while baking.  Bake 8 mins. on top rack, keep an eye on them, remove when golden brown.  Set aside to cool.

  3. Make the Pickled Cucumbers – dice a Persian cucumber into a small ¼” dice and in a small bowl combine ¼ cup rice vinegar, sugar and hot water, stir to dissolve.  Add to the bowl of diced cucumbers, reserve in the fridge.

  4. Make the Wasabi Crema – combine sour cream and prepared wasabi in a small bowl, reserve in the fridge.

  5. Prepare Ahi Poke- add diced ahi tuna to a bowl with thinly sliced scallions, soy sauce, sesame oil, siracha and toasted and black sesame seeds.  Stir to combine.

  6. Dice an avocado into a small dice and carefully fold into the ahi tuna mixture.

  7. Assemble the Ahi Tuna Poke Cups by spooning the ahi tuna and avocado mixture into the wonton cup, top with a few pickled cucumbers and a drizzle of the wasabi crema…serve!
